Taught in class Monday 25th October. We make our own breadcrumbs and flavour them with dukkah then stuff the mushrooms with fetta, top with crumbs and roast!

Marmalade & Soy Ham
Doing a practice run for my next class so used whatever was handy. Happened to be marmalade and soy sauce. Next time would add some garlic and ginger, but really just needed to test cooking times!

Deluxe Sunday Breakfast!
Taught in class Monday 22nd November. Eggs 2 ways, soft poached and scrambled, served with pan fried bacon, mushroom, mini romas, spinach and finished with Basil, served on top of toasted Turkish bread. Bring on Sundays!

Beautiful fresh watermelon, marinated fetta, chives and bundles of mint. Really refreshing!

Lovely, moist pudding, keeps really well, even freezes well. Served with creamy vanilla ice cream.

An altered version of an Italian classic. I didn't have veal or prosciutto so used lamb fillets instead. Still used the sage leaves, butter, white wine sauce combo.

Borrowed a Jamie Oliver recipe and made a few changes. Chocolate panettone bombe with marmalade, ice cream, coffee flavoured yoghurt, Morello cherries, pecans and glaced citrus pieces. So Christmassy!
